There's nothing more satisfying than a delicious buffalo chickpea sandwich. The delicious, spiciness of the buffalo sauce mixed with that creamy dressing is irresistible!
For this sandwich we decided to top it with a homemade guacamole and jalapeño cashew cheese. But, you can top the sandwich with your favorite toppings. This would also be great with a vegan blue cheese and tomatoes!
For the bun, we used Ezekiel buns because they're higher in protein and made from natural ingredients, however you can use whatever vegan bun you choose. Most buns are vegan, but always check the labels just in case.
These are awesome for a make ahead meal. The sandwiches can be formed and stored in the refrigerator overnight before reheating in the buffalo sauce.

Buffalo Chickpea Sandwich

Chickpea Sandwich Patty
- 2 cups chickpea flour1-1/2 cup of water1 Tsp of vegan chicken salt1 cup teff flour (or flour of choice for breading)1 Tbs ground flax seed
For the Sauce
- 1 cup Frank's Red Hot Sauce1/2 cup vegan butter of choice(amount can be changed depending on how saucy you like your wings)
Preparing the chickpea wings
In a large mixing bowl, mix in the chickpea flour and vegan chicken salt
Pour in the water a little at a time while stirring until you've reached a pancake mixture consistency
In a non-stick skillet on medium high heat, slightly oil the pan and then pour in mixture
Cook about 5 minutes or until you can flip the mixture over with your spatula without sticking
Cook an additional 2-3 minute on the other side
Immediately form into sandwich patties- a great tip for this is using wax paper to help form
Place in the refrigerator for 30-45 minutes to cool and set up completely
Once set, mix the ground flax seed with about 1 TBS of water
Pour the flax mixture (flax egg) into a bowl with the teff flour and mix well- more water can be added if needed
Coat the patties in the breading and air fry on 450 for 7 minutes or bake in the oven on 375 for 7-10 minutes until crispy
Mixing in the sauce
Using the same skillet on medium heat, add in the hot sauce and butter and stir until mixed together
Add in the chickpea patties and turn on the heat to simmer until completely covered and warm
These are perfect for a quick dinner. Most of the prep work is setting up in the fridge. You could easily make these the night before and then just pop them in the skillet the next night for dinner. These work great for meal prepping!
